If you prefer a slow cooking Instant Pot healthy recipe for the Covey Rise Farms dry-aged bone-in beef roast with salsa and Rotel, here's an adapted recipe for a 12-hour slow cook:

**Slow Cooked Covey Rise Farms Beef Roast with Salsa and Rotel:**

**Ingredients:**
- 1 Covey Rise Farms dry-aged bone-in beef roast
- 1 Jar of Salsa (Just needs to cover your roast)
- 1 can (10 ounces) Rotel (diced tomatoes and green chilies)
- Salt, to taste

**Instructions:**

1. **Prepare the Beef Roast:**
- Pat the beef roast dry with paper towels.
- Season the roast with salt, ensuring it's evenly coated.

2. **Sear the Beef Roast (Optional):** I didn't this last time
- Heat a skillet over medium-high heat.
- Sear the beef roast on all sides until browned. This step enhances the flavor but can be skipped if you prefer.

3. **Transfer to Slow Cooker:**
- Place the beef roast in the slow cooker.
- Pour the salsa and Rotel over the beef roast. I try and make sure its covered.

4. **Slow Cook for 12 Hours:**
- Set the slow cooker to the low heat setting.
- Cook the beef roast with salsa and Rotel for 12 hours. This extended cooking time at a low temperature allows the flavors to meld, and the beef becomes incredibly tender.

6. **Pour and Serve:**
- It should be fall apart, all you have to do is remove the bone.
- Serve the beef with the salsa and Rotel mixture as a delicious sauce over rice, chips or on a tortilla.

Slow cooking the beef roast for 12 hours will result in a tender, flavorful dish with the added richness of the salsa and Rotel. Adjust the salt to your liking, and enjoy this slow-cooked meal!
